Following the inaugural Collectible Fine Wine Friends Paulée in October 2025, the second annual gathering returns on the first Saturday in October—bringing together collectors and friends for an evening shaped by provenance, generosity, and human connection.

This is not simply a dinner.
Rooted in the tradition of Burgundy, a Paulée is a gathering where the wines define the evening, and the people in the room matter just as much as what’s in the glass.
What began last year as a defining moment for Collectible Fine Wine—an introduction of community over commerce—returns this fall with greater intention.
The Second Annual CFW Friends Paulée is a continuation of that vision: a room thoughtfully built, a table shaped by generosity, and an evening defined by exceptional bottles and the people who bring them.
This is a serious bottle share.
Guests are encouraged to bring a meaningful bottle, contributing to an evening defined by generosity, discovery, and shared experience.

The Evening

3:30pm Arrival | Champagne Reception

Guests are welcomed with Champagne and passed hors d’oeuvres, setting the tone for the evening ahead.

Bottles are checked in with the sommelier team, thoughtfully tagged, and staged to be shared throughout the night.

The Table | Seated Multi-Course Dinner

Dinner unfolds over four courses, each designed to complement the wines being poured.

Bottles move freely among the tables as guests rise, pour, and exchange—an evening shaped by generosity, curiosity, and motion rather than formality.

The Flow | A Progression of Wines & Conversation

There is no fixed order. Conversation and wine circulate organically, guided by the people in the room and the bottles they’ve brought to share.

What emerges is connection—between guests, between wines, and between the traditions that give the gathering its meaning.

Each guest contributes a bottle, creating a lineup shaped entirely by the people in the room.

Rooted in the tradition of Burgundy, a Paulée is less about any single bottle and more about the shared experience. It brings together collectors, partners, and friends of Collectible Fine Wine for an evening defined by generosity, curiosity, and discovery.

The result is something that can’t be replicated—a table that evolves organically, bottle by bottle, throughout the night.

The Bottles:

Each guest is expected to bring a bottle that reflects the spirit of the evening—thoughtful, expressive, and meant to be shared.

There is no fixed list, but that’s the point. The range of wines—across regions, vintages, and styles—creates a dynamic table that unfolds naturally over the course of the evening.

The Evening:

The evening begins with a Champagne reception at 3:30 PM, followed by a multi-course dinner commencing at 5:00 PM. Wines are opened, passed, and discussed throughout the meal, creating a rhythm that feels both structured and spontaneous.

This is not a seated tasting, but a shared experience built around conversation and connection.
